Henin, ranked No. 1 in the world, won through in just 62 minutes. She won the U.S. Open in 2003 and lost to Maria Sharapova in last year's title match.
Goerges, ranked No. 145 and making her grand slam debut, fought hard in the second set but Henin broke twice to advance, clinching victory with a winning backhand return.
Earlier, third seed Jelena Jankovic survived a tough second set to beat Jarmila Gajdosova of Slovakia 6-2 7-6.
Jankovic, a semifinalist last year, led 5-3, 0-40 on her opponent's serve in the second set but had to go through a tiebreak to clinch the victory.
Jankovic, who has won four titles in 2007, broke serve twice in the first set. She failed to convert three match points in the eighth game and two more in the ninth of the second set before settling for a tiebreaker.
Jankovic rebounded to take the tiebreak 7-2, winning on her seventh match point to clinch a meeting with Olga Govortsova of Belarus in the second round.
Two other seeded players won first-round matches early Monday. No. 15 Dinara Safina knocked off Catalina Castano 6-2, 6-3. No. 28 Ai Sugiyama beat Andreja Klepac 6-3, 6-1.
